Warming Tofu Curry
Ingredients:
1 block of medium firm organic tofu (sprouted ideal)
2 cans of Cha’s Coconut Milk
1 tbsp Thai Kitchen Red Curry Paste
1 cup of filtered water
2 local organic carrots, large
2 cups of frozen pesticide free broccoli
2 tbsp coconut aminos
1/4 tsp of sea salt
2 tbsp avocado oil
GF Ramen Noodles (however many you want to serve it on)
Directions:
Add curry paste, avocado oil and coconut aminos to a pot on medium heat.
Add frozen broccoli, carrots and coconut milk. Let sit until it simmers. Stir occasionally.
Cut up tofu into small blocks/chunks and add into the pot.
Add water, sea salt and any extra paste if you’d like it spicier. Let simmer until carrots become soft.
In a separate pot during this process, cook ramen noodles. They are quite easy to cook, they take about 3 minutes to cook once the water is fully boiled and ready for them. Drain, rinse, and add back into warm pot with oil and salt.
When the curry is ready, you can serve it over top the noodles. It’s delicious!
